I love curry!!!!

So I found this curry recipe and it was AMAZING...so I thought I'd post it for any curry lovers out there...

Spinach Bhaji

1 lb spinach
1 cauliflower
2 large onions, chopped
1 tin (454g) chopped tomatoes
½ pint (225ml) vegetable stock
2 cloves garlic
1 inch ginger root, peeled and chopped finely (or 1 tsp ground ginger)
1½ tsp cayenne pepper
1 tsp ground cumin
1 tsp ground turmeric
2 tsp ground coriander

chicken (if you want it)

Cut up cauliflower and trim stalks from the spinach. Heat 4 tbsps oil and fry the onions and cauliflower for 3 minutes. Add garlic, ginger and other spices and cook gently for 1 minute. Stir in tinned tomatoes, stock, some salt and pepper. Bring to boil, cover and simmer for 8 minutes. Add spinach to the pan turning to wilt the leaves. Cover pan and simmer for 8-10 minutes, stirring frequently until cauliflower is tender.

Looks like we bought a house



Many of you know we've been house hunting for the last few months and had finally given up a few weeks ago due to the insane housing market right now. Then yesterday our realtor called and told us one of our offers had been accepted. I still don't believe it. The house needs a little work, but it's what we'd hoped for with one story, a huge yard, nearby park, roses everywhere and three car garage. It's a miracle!

On Sunday the whole Mitchell family went out for their traditional western photo. It's so neat to see how the family has grown! It was fun to hang out with everyone! We need to get together more often!

Nick and I went to an antique store in the mountains and found this hutch that we liked, but it was maroon and gold. I really liked the way that it looked, but I didn't like the color. Nick had to do some talking, but finally convinced me to buy it. We brought it to his parents house that night and started sanding. Nick told me to wipe the dust off with a damp rag. I got the rag and started wiping and all of the paint started coming off. We wiped all of the paint off that night and then put a coat of primer on it the next day. We didn't have a truck to bring it home, so we had to leave it there for two weeks. I couldn't hardly stand it. We finally got to go back up a couple of weeks later and started sanding the primer right away. We spent the whole day and 5 cans of spray paint on it. It looked amazing. Nick did a fabulous job!

Nail Painting Party!


Emilia at 3 months!




At 3 months old Emilia is now about 12 pounds! Her eyes have changed colors too...they are a brownish green. Mommy is still her favorite person, but she loves laughing at her big sister and being bounced by her Daddy. Her sleeping pattern isn't amazing. She doesn't like napping very much and she still wakes up about 3 times a night, but her parents love her anyway!

Happy Birthday Mom!

"Daddy, I busted my face"




Well it was another early morning for Nick and Nia. Nick was getting ready to make a phone call while lounging on the sofa. Nia climbed up on his legs which were resting on the coffee table. She got all wobbly, fell forward, and smashed her lip on the coffee table. There was blood everywhere...her face, her clothes, Nicks shirt. After Nick cleaned her up and got her some breakfast she kept playing with her lip. She looked up at Nick and said, "Daddy, I busted my face on the table." Needless to say it was a rough morning for Nia!
